Banana Chocolate Chip Muffins

When I was younger and lived in Hawaii I had a friend named Chanda and her mom use to make this delicious muffins. I have remembered and thought of these muffins often during the past 20 years. They are a great after school snack and some what nutritious with banana in it. Dora and Boots would say "Yum yum yum yum yum, ¡delicioso!"

Banana Chocolate Chip Muffins

Ingredients:
1 cup butter, softened
2 cups sugar
7 large ripe bananas, mashed
1 1/2 teaspoons vanilla extract
4 eggs, slightly beaten
3 cups flour
3/4 c chocolate chips
1/2 teaspoon salt
2 teaspoons baking soda


Directions:
In large bowl, cream the butter and sugar. Then, blend in the bananas, vanilla and eggs.
Whisk together the dry ingredients in separate bowl.
Add dry ingredients to the banana mixture and mix until just combined and then fold in chocolate chips with wooden spoon.
Pour mixture into muffin pans.
4. Bake at 350F until done. Check muffins after 25 minutes. You will know muffins are done when a toothpick inserted in the middle comes out clean and the tops of the muffins are golden brown. Cool the banana bread in the pan for 10 minutes then cool completely on a wire rack.
